In this way, this past Fri\u00adday I said \u2018to hell\u00adfire with it\u2019 and made a cake in my half torn down kitchen. The broil\u00ader was in work\u00ading request and there was ledge space enough for the blender, and that was ade\u00adquate for&nbsp;me.<\/p>\n\n\n\n<p><span class=\"dropcap\">I<\/span> also had quite a few peach\u00ades on the counter that were get\u00adting a bit too ripe, so I sim\u00admered them all down into a jam. This is great for when peach\u00ades get too soft to slice prop\u00ader\u00adly and just kind of turn to mush in your hands when you try to pull the sliced parts off \u2013 you still get to keep all the peachy fla\u00advor, and the mushi\u00adness doesn\u2019t mat\u00adter once it cooks down into a soft, fruity compote.<\/p>\n\n\n\n<p>They are par\u00adtic\u00adu\u00adlar, how\u00adev\u00ader, to be con\u00adsis\u00adtent in the use of gar\u00adnish\u00adings. Flow\u00aders and fruits are reserved for sweet dish\u00ades, except in the case of nas\u00adtur\u00adtiums, which they regard as much a veg\u00adetable as a flower and use freely with meats. It isn\u2019t essen\u00adtial that every dish should be turned into an elab\u00ado\u00adrate work of art, as if it were to be entered at the annu\u00adal exhi\u00adbi\u00adtion of the Soci\u00e9t\u00e9 des Chefs de Cui\u00adsine, but nei\u00adther is there any rea\u00adson, even with mod\u00adest means at com\u00admand, for giv\u00ading cause for that old slo\u00adgan of the great Amer\u00adi\u00adcan din\u00adner table: \u201cIt tastes bet\u00adter than it&nbsp;looks.\u201d<\/p>\n\n\n\n<p><strong>Vanil\u00adla and lemon have an almost uni\u00adver\u00adsal appeal to the palate, and know\u00ading this, the Amer\u00adi\u00adcan cook, like the gen\u00ader\u00ada\u00adtion before her, has always sea\u00adsoned her rice pud\u00addings<\/strong>, for instance, with one or the oth\u00ader, just as her apple sauce has invari\u00adably been fla\u00advored with lemon or nut\u00admeg, her bread pud\u00adding with vanil\u00adla, and so all along her restrict\u00aded line. When near\u00adly cold beat into the syrup the whites of the eggs, beat\u00aden until foamy, and the fla\u00advor\u00ading extract. Store in a fruit jar, close\u00adly cov\u00adered. To use, put three table\u00adspoon\u00adfuls into a glass half full of cold water, stir in one-fourth a tea\u00adspoon\u00adful of soda, and drink while effervescing.<\/li><li>A pint of any kind of fruit juice may dis\u00adplace the water, when a tea\u00adspoon\u00adful of lemon juice should be added to the con\u00adtents of each glass before stir\u00adring in the&nbsp;soda.<\/li><li>Pre\u00adheat the oven to 350 degrees Fahren\u00adheit. Grate the choco\u00adlate, put it in a dou\u00adble boil\u00ader with the milk; stir until hot, and add the sug\u00adar, vanil\u00adla, cin\u00adna\u00admon and one pint of the cream. When cold, freeze; when frozen, remove the dash\u00ader and stir in the remain\u00ading pint of the cream whipped to a stiff&nbsp;froth.<\/li><li>In a large bowl, mix togeth\u00ader the flour, salt, bak\u00ading pow\u00adder, bak\u00ading soda, and cin\u00adna\u00admon.&nbsp;Mash the rasp\u00adber\u00adries; add half the sug\u00adar and the lemon juice. Put the remain\u00ading sug\u00adar and half the cream in a dou\u00adble boil\u00ader; stir until the sug\u00adar is dis\u00adsolved, and stand aside to cool; when cold, add the remain\u00ading cream, turn the mix\u00adture into the freez\u00ader, and stir until part\u00adly frozen.<\/li><li>Place the pans in the oven and bake for 40\u201350 min\u00adutes, or until they\u2019re gold\u00aden around the edges. In mak\u00ading pies of juicy fruit, it is a good way to set a small tea-cup on the bot\u00adtom crust, and lay the fruit all round it. The juice will col\u00adlect under the cup, and not run out at the edges or top of the&nbsp;pie.<\/li><\/ol>\n\n\n\n<p><\/p><\/div>\n\n\n\n<p><\/p><div class=\"jetpack-recipe-notes\">\n\n\n\n<p class=\"p1\"><span class=\"s1\">Tips:&nbsp;<\/span>Fruit pies with lids, should have loaf-sug\u00adar grat\u00aded over them. If they have been baked the day before, they should be warmed in the stove, or near the fire, before they are sent to table, to soft\u00aden the crust, and make them taste fresh.
