At the present day among the favored few, who have full purs\u00ades, are found sets of lit\u00adtle sil\u00adver chaf\u00ading-dish\u00ades about four inch\u00ades square.<\/p>\n\n\n\n<p><span class=\"dropcap\">I<\/span> feel like peo\u00adple use the term \u201c<em><strong>win\u00adter flower\u201d<\/strong><\/em>&nbsp;a lot nowa\u00addays. It isn\u2019t essen\u00adtial that every dish should be turned into an elab\u00ado\u00adrate work of art, as if it were to be entered at the annu\u00adal exhi\u00adbi\u00adtion of the <a href=\"#\">Soci\u00e9t\u00e9 des Chefs de Cui\u00adsine<\/a>, but nei\u00adther is there any rea\u00adson, even with mod\u00adest means at com\u00admand, for giv\u00ading cause for that old slo\u00adgan of the great Amer\u00adi\u00adcan din\u00adner table: \u201cIt tastes bet\u00adter than it&nbsp;looks.\u201d<\/p>\n\n\n\n<p><em>The sim\u00adple desserts are the best desserts, and none is more pleas\u00ading to the eye and the palate or so eas\u00adi\u00adly made or so fre\u00adquent\u00adly served in an imper\u00adfect man\u00adner, than custards.<\/em><\/p>\n\n\n\n<p><strong>These being the more eas\u00adi\u00adly made may be con\u00adsid\u00adered first.<\/strong> They may either be steamed or baked but the mix\u00adture is the same in either case. Allow two eggs and a tea\u00adspoon\u00adful of sug\u00adar to each half pint of milk. Beat the eggs with sug\u00adar thor\u00adough\u00adly, but do not froth them, as the cus\u00adtard must be as smooth and free from holes as pos\u00adsi\u00adble. Add the milk slow\u00adly, also a few drops of fla\u00advor\u00ading essence\u2014vanilla, almonds or&nbsp;lemon.<\/p>\n\n\n\n<figure Scald half the cream and the sug\u00adar; when cold, add the remain\u00ading cream and the vanil\u00adla, and freeze. When frozen, remove the dash\u00ader, stir in the pow\u00addered bis\u00adcuits, and repack to&nbsp;ripen.<\/li><li>&nbsp;As soon as the cus\u00adtard begins to thick\u00aden the saucepan must be tak\u00aden from the fire and the stir\u00adring con\u00adtin\u00adued for a sec\u00adond or two longer. If the cook\u00ading is done in a dou\u00adble boil\u00ader the risk of boil\u00ading is very much lessened.<\/li><li>Blanch and pound or grate the nuts. Put half the cream and all the sug\u00adar in a dou\u00adble boil\u00ader; stir until the sug\u00adar is dis\u00adsolved and stand aside to cool; when cold, add the nuts, the fla\u00advor\u00ading and the remain\u00ading cream, mix, add the col\u00ador\u00ading, and turn into the freez\u00ader to freeze. If green col\u00ador\u00ading mat\u00adter is not at hand, a lit\u00adtle spinach or pars\u00adley may be chopped and rubbed with a small quan\u00adti\u00adty of alcohol.<\/li><li>&nbsp;Before you send it to table, split the vanil\u00adla bean, scrape out the seeds and add them to the hot cream, and add the bean bro\u00adken into pieces. Stir until the sug\u00adar is dis\u00adsolved, and strain through a colan\u00adder. When this is cold, add the remain\u00ading cream and freeze. This should be repacked and giv\u00aden two hours to ripen. Four would be better.<\/li><li>Allow it to bake for 45\u201350 min\u00adutes. Make an infu\u00adsion of cof\u00adfee by pour\u00ading half a pint of boil\u00ading milk on a heap\u00ading table\u00adspoon\u00adful of pow\u00addered cof\u00adfee.
